2 egg whites
1/3 cup sugar
1/2 cup semisweet chocolate mini-morsel
1/2 teaspoon peppermint extract
Beat egg whites (at room temperature) in a large bowl at high speed of an electric mixer
1 minute. Gradually add sugar, one tablespoon at a time, beating until stiff peaks form and
sugar dissolves (2 to 4 minutes). Gently fold in chocolate morsels and peppermint extract.
Drop by heaping teaspoonfuls onto cookie sheets lined with wax paper. Bake at 300° for
35 minutes. Cool slightly on cookie sheet; gently remove from wax paper, and cool completely on wire racks.
